They replace parchment forever — except when they actively ruin what you are baking.

What's Inside

A silicone mat pays for itself in about twenty rolls of parchment. It also changes how your baking browns, which is the part nobody mentions.

What They Do Well

  • Reusable for years with normal care
  • Nothing sticks — sugar, caramel, cheese, egg wash
  • No curling edges, unlike parchment
  • Silicone is stable to roughly 230°C / 450°F
  • Dishwasher safe on the top rack

For sheet pan dinners, roasted vegetables, and anything sticky, a mat is genuinely better than parchment.

Where They Hurt You

Silicone is an insulator. It blocks direct contact between the dough and the hot metal, which reduces bottom browning.

That matters for:

  • Cookies you want crisp on the bottom
  • Pizza and flatbread
  • Pie crust
  • Bread rolls

For these, bare metal or parchment gives a better crust. Parchment is thin enough to conduct heat; a 1mm silicone mat is not.

The Cleaning Reality

They are not as non-stick as the marketing implies once they get a film of baked-on oil. Grease polymerises on silicone the same way it does on cast iron.

Wash with hot water and dish soap, and every few months scrub with baking soda paste. Never use a scouring pad — it scratches the surface and creates places for residue to collect.

When Parchment Still Wins

  1. High-heat roasting above 230°C
  2. Anything where you want maximum bottom browning
  3. Lining a pan for a messy job you would rather throw away
  4. Baking on a pan you do not want to wash

Buying Advice

  • Buy a mat sized to your most-used sheet pan, not a set of odd sizes
  • Silicone with a fibreglass core is more dimensionally stable than pure silicone
  • Check the temperature rating — cheap mats top out around 200°C
  • Avoid mats with printed measurements unless the print is moulded, not painted

Verdict

Buy one mat for roasting and sticky jobs. Keep parchment for delicate baking and high heat. Using a mat for everything will quietly cost you the crust on your cookies.
