What to Look For
Choosing the right chef's knife depends on your cooking style, hand size, and budget. Here are the key factors we consider:
- Blade Material: High-carbon stainless steel offers the best balance of sharpness, durability, and maintenance.
- Weight & Balance: German knives tend to be heavier; Japanese knives are lighter. Choose based on your comfort.
- Handle: Should feel secure and comfortable. Test multiple grips to find what works for you.
- Full Tang: The blade should extend through the handle for better balance and durability.
How We Test
Every knife is tested over 2 weeks of real cooking. We dice onions, julienne carrots, chop herbs, and break down whole chickens. We evaluate sharpness out of the box, edge retention after heavy use, and how well it holds up through proper maintenance.
